  1. To make the dressing, add apple cider vinegar or lemon juice, honey, ground mustard, oil, salt, and pepper in a small bowl. Mix to combine.

  2. Into a large bowl, grate the beets and apples.

  3. Pour the dressing over the grated beets and apples. Mix well to combine.

  4. Serve chilled.

  5. Optional: Garnish with parsley.

  6. Chef Tip: If ground mustard is unavailable, use a teaspoon of prepared mustard instead.
