Directions

  1. In a food processor fitted with a blade, place chickpeas, beets, yogurt/tahini, garlic, lemon juice, cumin, coriander (optional) and salt.

  2. Run the processor for a bit, and while it’s running, add 2 ice cubes to help emulsify and create a nice, creamy consistency.

  3. Taste and adjust seasonings to your liking. If the hummus is too thick, add more ice as the food processor runs. Repeat until desired consistency is reached.

  4. Transfer beet hummus to a bowl and serve.

  5. Serving Suggestion: Whole wheat pita wedges or veggies.

  6. Optional: Sprinkle feta and parsley on top.

  7. Chef Tip: If you don’t have a food processor or blender, use a potato masher or the back of a fork to mash up chickpeas and beets and mince the garlic before adding.
