Directions

  1. Process beets with milk in a blender until smooth. Then add the eggs, oil, and vanilla (optional), and process on low until well combined.

  2. In a medium bowl, thoroughly combine flour, baking powder, cocoa powder, brown sugar, and salt.

  3. Pour in the wet ingredients and stir to combine. Do not overstir; a few small lumps are fine.

  4. Heat griddle or skillet over low heat and grease with oil. Add ¼ cup of batter to the pan. You can cook 2-3 pancakes at a time.

  5. Cook until the pancake starts to set, 5-10 minutes, then flip and allow it to finish cooking, another 2-3 minutes.

  6. Serve with a pat of butter and syrup.
