  1. Cook macaroni according to the package instructions (minus 1 minute). Once done, drain and set aside.

  2. Add butter in a large skillet or pot; once butter is melted, sprinkle in the flour and cook for a minute. (Brown the butter before adding the flour for a more developed flavor.)

  3. Slowly whisk in the milk and cook until the sauce is smooth, without any lumps, and starts to thicken.

  4. Add spices: garlic powder, paprika, salt, and pepper.

  5. Stir in the pumpkin puree and cook for a couple of minutes until everything comes together.

  6. Add the grated low-fat cheddar cheese and cook until the cheese is melted.

  7. Add the cooked macaroni to the sauce and mix until evenly coated.

  8. Transfer pumpkin mac and cheese to a bowl and serve.
